Dr. Pedro Mena Parreño is an Agronomical Engineer and holds a Ph.D. in Molecular and Cell Biology. He developed his predoctoral work at the Dept. of Food Science and Technology of CEBAS-CSIC (Spanish National Research Council) (Murcia, Spain) and is presently working as Senior Research Fellow in Prof. Daniele Del Rio’s Lab at the University of Parma (Italy). He has worked actively on the effect of processing and storage on the quality of plant-derived products, with a particular focus on their phenolic composition. His present line of research is related to the bioavailability and biological activity of plant bioactives in human, animal, and cell models, with a particular focus on (poly)phenolic compounds. As a summary of his 8-year research, Pedro has published 61 papers in peer reviewed ISI journals, he has 30 contributions to international conferences, 6 book chapters, 4 granted patents, invited presentations in international conferences and courses, and active participations in international networks.
